Our Menu this week

I start to school tomorrow and I am trying to get in the habit of planning out meals for the week to make it easier for me to maintain my weight and keep the house under control while in nursing school. We dont have much money so I am trying to cut our grocery bill down to under $100 a week. For 3 people and buying diapers, that can be difficult. BUT... I figured if I plan 3 meals a week then we can have church meal one night and leftovers for 2 and of course we will probably eat out one night, normally we get 5 for 5 sonic burgers so its really not too expensive. I am also on weight watchers and I'm trying to prove that you can eat well on a budget, because I have to.  
Today I went to the grocery and got our 3 main meals for the week. 
BBQ Chicken Pizza- just get the thin and crispy pizza crust that is a 12' circle. Some low fat bbq sauce and a rotisserie chicken thats already cooked. You can pull the skin off and have a super fast healthy  meal. 
Salsa Stoup with double decker quesadillas- This is a rachael ray recipe and its a mix between a soup and a stew. It is super easy to get a low carb tortilla and low fat/skim milk cheese. Everything is the soup is pretty much vegetables YAY! 
Finally Spaghetti Squash Spaghetti- I have never made spaghetti with a spaghetti squash but my weight watcher friends told me how. I figured since I got the low-sodium, Chunky vegetable spaghetti sauce that it is mainly vegetables and cant be too terrible for me. I also got ground turkey instead of ground beef and of course the noodles are really squash. Hopefully it wont taste too different. I told Mark if he doesn't like it we will never eat it again. 
I will have to let you know how everything taste and how school goes TOMORROW! Wish me luck!

  1. I thought it was great but Mark wasn't to fond of it. He would rather have actually pasta.
